One of the better known dishes of British Cuisine is the Welsh Rarebit (or Welsh rabbit). It is a simple dish made of toasted bread and a savory cheese sauce much like a fondue. The dish has been around Great Britain since the 17th century and is the perfect easy meal for the cold winter months in any continent.

Making a Welsh Rarebit is quite easy and takes a total of 20 minutes to prep and cook.

Ingredients: 

Makes two cups of cheese sauce

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon dry mustard (or 1 teaspoon Dijon mustard if dry mustard not available)
  • 1/4 teaspoon Worcestershire sauce
  • 2 drops hot sauce like Tobasco (optional)
  • 1 cup low-fat milk
  • 1/2 cup beer of your choice
  • 1 1/2 cups Cheddar cheese, diced or shredded
  • 1 loaf of bread of your choice (Sourdough is perferable)

Directions: 

  1. Melt butter in a medium sauce pan over low heat.
  2. Add in flour, salt, pepper, Worcestershire sauce, mustard, and hot sauce; continue to cook and stir slowly until the mixture is smooth, 5 minutes.
  3. Remove from heat; gradually add in milk and stir; return to heat and continue stirring until the mixture comes to a boil, about 1 minute.
  4. Gradually add in the beer; cook for 1 minute.
  5. Melt the cheese into the mixture slowly until completely incorporated. Remove from heat.
  6. Toast your bread until crispy, then add to plate and spoon cheese sauce on top.
  7. Enjoy!

Additional tips: 

Some people like to make a modern version of this recipe and double the yum factor on this dish. Try using an English Muffin as the toast base and rub a bit of garlic onto the bread before toasting. Add a thin slice of tomato to the toast before spreading on the cheese sauce for an extra kick.
