Not only is cilantro good for you because it contains antioxidants, but it also is very flavorful and can turn your average dinner into a savory treat.  Cooking with cilantro can make for an easy, yet delicious experience. Pairing cilantro with lime can help make a meal that takes little time to prepare, yet tastes like you spent all day in the kitchen. Here are some quick and easy recipes that will leave your guests asking for seconds.

Cilantro-Lime Marinade

-  for chicken, beef or pork that is both delicious and easy to make.

You will need:

  • 1 cup of buttermilk
  • 1 lime, juiced
  • ¼ of chopped cilantro

Combine all ingredients in a bowl and whisk together until blended. Pour over raw chicken, beef or pork. Let set in refrigerator for at least 45 minutes. Cook meat as directed. The meat goes great with a side of rice and your favorite vegetable.

Cilantro-Lime Enchilada Casserole

You will need:

  • 28 ounces of  tomato sauce
  • 1 lime, juiced
  • ½ cilantro, chopped
  • 1 cup chopped onion
  • 3 chicken breast, cooked and shredded
  • ¼ cheddar cheese
  • 2 cups rice

Directions:

  1. In a pan, sauté onions in oil until they are cooked, or about 10 minutes
  2. In a pot or dutch oven combine tomato sauce lime juice, and cooked onion. Bring to a simmer. Once simmering, turn down low and add chicken and cilantro.
  3. Let simmer on low for at least 20 minutes.
  4. Pour over cooked rice and sprinkle with cheese. You can also add some cilantro as a garnish.
