Looking for a quick, yet tasty, option for dinner? The next time you serve rice as a side, make about 1/2 cup per person extra, and you’re on your way to deliciousness. As a bonus, you can slip almost any meat and vegetable leftovers into the dish and prevent having them go to waste.
Prepping the Protein
To use leftover meat, poultry or seafood, cut everything into bite-sized pieces and set it aside. You can use all the same kind of meat, or you can mix together whatever you find in the fridge. To start with fresh, uncooked meat, it is easiest if you cook and cube the beef, pork, lamb, chicken, shrimp or other choice before assembling your fried rice. You can also make a vegetable fried rice without any meat, if you prefer.
Setting the Stage
You can add just about anything to your fried rice, but there are some ingredients that are pretty much standard, so you might start with those. Saute some chopped onions in oil until they are translucent and then add some grated carrots, baby sweet peas, and any other vegetables you have on hand. When everything is just getting fork-tender, you’re ready for the next step.
Readying the Star
While the veggies are warming up, fluff your leftover rice to separate the grains. When the veggies are ready, add the rice and mix everything together. Add the meat and cook everything together until you have a luscious, hot blend.
Kicking It Up
Beat an egg or two thoroughly. Make a crater in the center of your rice mix and pour in the egg, stirring it to keep it scrambled. As it cooks in a wok, break it up and mix it through the rice, meat and vegetables. As a final touch, add a healthy dose of soy sauce.
Surprising Your Family or Friends
Up the protein and fiber factors by substituting cooked quinoa for the rice. The flavor will be just like traditional fried rice, but you will reap the health benefits of another whole grain choice. You can also substitute or mix brown rice with white, or add other grains to your dish.
