The boning knife, or as many know it, "that skinny little knife that I never use", may be the most neglected knife in home kitchens everywhere. As a long time butcher, as well as a one time culinary student, I have learned first hand about the joys of having a good boning knife handy. Believe it or not, the boning knife is not there to open packages, or help prop open a can. It is very much a vital component to any complete knife kit.

The boning knife's literal use is... well... boning a cut of meat. What makes it such an attractive knife for this is it's small blade, and unique shape that makes it glide smoothly across the bone when taking the meat off. This results in a high yield, as well as a better looking cut. A good knife will leave the meat looking smooth, and attractive to the eye, as well as the appetite. While you might think this has no use for you, it can actually be quite helpful.

Not everyone is a big game hunter that will need to bone out a bears leg, but what about those chicken drumsticks you've got lying around your fridge? Couldn't you use that meat in a pasta dish, or a salad topping? With a nice, sharp boning knife, taking that meat off the bone is about as easily three slips of the knife. Same thing goes with any poultry. With about 5 minutes of work, you can get all of the meat off of a whole chicken to use for whatever dish you desire.

Boning out meat takes practice, but it should not be intimidating. Boning out a chicken will be effortless in no time. Just be sure to use a nice, sharp knife, take good care of it, and practice, practice, practice! Who knows, after a while that leg of lamb will show up in your kitchen, and you will know exactly what to do with it!
